Espresso
Correctly making espresso requires a good espresso machine and an excellent grinder. Good quality, reliable sets start around $1700-$2200; Pasquini, Rancillio Silvia & Rocky Grinder, ECM Giotto, and Nuova Simonelli Musica are all great examples. I have worked with all of these models, and have owned Pasquini, Rancillio, Gaggia, and I currently own an Elektra 60s and a Nuova Simonnei Musica. Allmake excellent espresso, and the Elektra and the Nuova can generate steam for milk almost endlessly. The other machines can steam milk, but require more recovery time before the next operation after steaming. I have also worked with some department store brands such as Quisenart and Brevelle. Surprisingly, I have made excellent espresso with these machines, but I found it difficult to concisely get it correct. If this is all you have to work with, do not be afraid to keep at it until you get it right.
